Ingredients (Jollof) -
1lbs Parboil rice (Half or slightly boiled in salted water and set aside)
1 & 1/2 cup Tomato sauce
1tbs Tomato Paste
1tbs Diced Onions
1-2 Sliced fresh Tomato
1/2tbs Chopped Garlic
1/4 cup Celery
Salt to taste
1/2 Black pepper
1/2tbs Italian seasoning
8tbs Olive Oil
2tbs Butter
Stock (Chicken, vegetable or Beef) or water
Heat up 4tbs olive oil in a skillet
Add diced onions, chopped garlic, sliced fresh tomato, celery and let
cook for 1-2 min' at medium heat.
Add butter,tomato sauce,black pepper,salt and Italian seasoning
Add stock or water
Let cook for at low heat for 5-8 min'
Transfer and combine sauce and rice in a 4 quart or bigger pot
Adjust seasoning and let bake in the oven @ 350-380 dgrs for 20 min'
or till done
Ingredients (Moin Moin) -
1lbs Beans (Local Nigerian Beans or Black Eye) skinned, grounded along
with red bell pepper and onions.
1/4 cup chopped onions
1 Red bell pepper
Salt to taste
Black pepper
1/2 tbs Italian seasoning
1/4 melted butter or olive oil
Combine mixture in a baking dish, adjust seasoning and steam bake in a
380 dgrs oven till done (Quick test by sticking a fork in the middle
and make sure noting stick to the fork)
Ingredients (Stewed Beef) -
2lbs beef (Seasoned, boiled and lightly fried)
1 & 1/2 cup Tomato sauce
1tbs Tomato Paste
1tbs Diced Onions
1-2 Sliced fresh Tomato
1/2tbs Chopped Garlic
Salt to taste
1/2 Black pepper
1/2tbs Italian seasoning
8tbs Olive Oil
Method -
Combine ingredients including beef in a skillet or pot and simmer for
20-30 min' to sauce thickens.
Adjust seasoning as needed.
Fried diced plantain -
Cut or dice platain
Season with salt and fry vegetable oil at 375 dgrs till golden brown.
Plate as desired and enjoy with any cold refreshing beverage or a
glass of Malbec, Syrah or any white wine of your choice.

Bitter leaf soup or Ofé Onugbo is popularly eaten by the Igbo speaking people of Eastern Nigeria. It's prepared with dried leaves of the ever green plant called Vernonia amygdaline.
Bitter leaf soup is also a favorite delicacy in Cameroon and there is of course regional variations and cooking techniques.
Recipe for 2-4
Ingredients-
1lb Beef (Cleaned, cut, boiled/fried) Save stock.
1/4 cup soaked dried shrimp
Dried fish
Stock fish (Boiled and prepped)
3 tbs palm oil
3 small size coco yam/Thickener (pealed, boiled and mashed)
1/4 cup sliced onion
1/2 Habanero pepper
1 tsp Chili powder
1/2 cup soaked bitter leaf
Salt to taste
1/2 tsp black pepper
1/2 tsp chipotle powder
1/2 tsp Italian seasoning
1 cup beef stock
Method-
Heat up palm oil in a pot
Add onion and let cook for 1 minute at medium heat
Add shrimp, stock and dried fish, habanero pepper and beef.
Add beef stock, salt, black pepper, chipotle powder, Italian seasoning
Stir and let cook at medium heat for 5-8 minutes
